Gather: Classic No-Bake Cookies

Many of us are probably familiar with no-bake cookies, and for good reason. They are simple to whip up, don't require baking time, and best of all, they taste delicious! This classic recipe is perfect for school lunches or when you need a quick snack, but don't want something that requires a lot of effort.

Chocolate No-Bake Cookies


* 1 1/2 cups granulated sugar

* 1/4 cup unsweetened cocoa

* 1 stick of butter

* 1/2 cup milk

* 1 teaspoon vanilla

* 1 cup peanut butter

* 2 1/2 cups oatmeal (quick oats or old-fashioned oats both work well)


In a medium saucepan over medium-high heat, combine the sugar, cocoa, butter, and milk. Bring to a rapid boil and boil for two minutes, stirring constantly. 

Remove from heat and stir in the vanilla and peanut butter. Stir in the oats until blended, then immediately drop by tablespoons onto waxed paper. Let cool until set.

YIELD: approximately 20 cookies
