Gather: Mama's Strawberry Pie

I don’t know where this recipe originated from, but it’s one that has been in my mama’s recipe arsenal for as long as I can remember. Strawberry pie has to be the crowning glory of berry season. There’s nothing like flaky pie crust piled high with sweet, red strawberries and fluffy whipped cream. This recipe is simple to make and bursting with flavor. As crazy as it sounds, don’t omit the dash of salt and pepper. Somehow they both enhance the flavor of the strawberries!
Mama’s Strawberry Pie
3 baked pie crusts
4 cups water
2 cups sugar
3/4 cup Clear Jell (mix with a small amount of water so that it will pour easily)*
1 (0.3 oz.) box strawberry Jello
1 (0.3 oz.) box raspberry Jello
2 teaspoons lemon juice
dash of salt and pepper
Sliced strawberries (however much your heart desires)
In a medium saucepan bring sugar and water to a boil over medium heat. Boil for one minute to dissolve sugar, then add Clear Jell. Be sure to stir constantly. Cook until thickened. Remove from heat and and stir in the jello, lemon juice, salt, and pepper. Fold in the desired amount of sliced strawberries, then pour into baked and cooled pie crusts. Top with whipped cream if desired.
Yield: 3 pies
* Clear Jell is available at most bulk food stores.
